Cow and goat cheese made with swiss techinque only to be found here and in Costa Rica, San Gerado de Rivas.

Since eating the cheese in Costa Rica i was most eccited to finally visit la Granacha in Nicaragua.

A Spanish restaurant in Managua buys their cheese.

At the moment they process 100l of milk/day to produce 20lbs Tilsit cheese which according to Pablo (Manager of the cheese association, you find him at the Comedor) is the one which lasts the longest without going bad.

260c$/lb Tilsit goat cheese
Costa Rica is more pricey and also thecheese costs about twice as much there. But you get a bigger selection of cheese, yoghurt, Mozarella, cream cheese etc.

Local coffee, teas and lettuce sold hete too.

This place is worth a detour ! Cheese are very good. We bought both goat and cow cheese and loved them both.

there are building a very good street after Estelí. Rest to drive up to the mirador bumpy but with normal car possible. Up to 3m high you'll reach branches. Cheese, yogurt, herbs to buy. Walk to mirador about 5min. Beautyful!
